Fig, Proscuitto and Arugula Pizza

Fig, Proscuitto and Arugula PizzaHomemade pizza is always a delicious treat – and I find that the tastier the toppings, the tastier the pizza.  Patrick loves the combination of sweet and salty (emphasis on the sweet), so this is his favorite one.  Salty prosciutto combines with sweet fig jam – but if you want to go vegetarian just omit the meat.

Here’s what you will need:

1 prepared pizza crust (I am always on the lookout for new ones – especially at specialty markets – but in a pinch even a Boboli will do – and you can of course make your own pizza dough or use a packaged dough such as from Trader Joe’s)

1/2 jar fig jam (about 1 cup)

1 cup shredded mozzarella

3-4 slices prosciutto

1 cup arugula

1 teaspoon olive oil

1 teaspoon balsamic vinegar

salt

Here’s what you do:

1.  Preheat the oven according to the directions on the prepared crust package.

2.  Spread the fig jam all over the prepared crust.  Sprinkle with the cheese and top with the prosciutto.  Cheese for proscuitto pizza

3.  Bake in the oven according to the directions on the prepared crust package, making sure the cheese and prosciutto are bubbly and turning golden.  In the meantime, mix together the arugula, olive oil, vinegar and salt in a bowl.Pizza before arugula

4.  When the pizza is done, remove from the oven, top with the arugula, and slice.
